Organic grapes, crushed, wild ferment on skins in open fermenter, extracting the raw colour of Pinot Gris, pressed then put in a tank without fining, racked and put in a barrel for 6 months, unfiltered. Vegan friendly.
Special Release Jake Sparkling rosé, named after baby Jacob, is made on a base wine of 2017 Pinot Noir and Chardonnay which came from the Borenore vineyard. This base wine was then blended with 30% of NV Pinot Noir Chardonnay that was left on lees for over a decade, adding further structure to the wine.
Violets, mulberry and dark cherry aromas. A rich, fruit driven palate with light spice, vanilla and anise characters. Ripe, gentle tannins from a high quality vintage, supported by French oak. An excellent cellaring prospect.
